The Japanese soybean paste known as miso was sent to the ISS in March 2020 .
Researchers sent a mixture of soybeans, rice kÅji , and salt to run an experiment to see if the mixture would ferment.
After 30 days , the now-fermented miso returned to Earth , where its chemical and microbial composition was analyzed.
