Asparagus, my friends, what do you do with the asparagus? You must rehydrate them in water.

You do that with all the vegetables and make sure everything is OK.

Remember, this is cooking, not rocket science, so we're not trying to impress anybody. We just want to cook a quick little steak dinner.

We're going to let it cook a little bit, get the shallots to get some flavor out of it.

I like to use cornstarch to bring up the consistency of the sauce.

A sauce is looking very good already, but it's too thin, so you can let it get it reduced to the right consistency.

If you're using a red wine, you must let it reduce, but a Marsala wine or a port wine.
